What fryer grease is

Fryer grease is the heavier fraction of frying fat — the semi-solid grease that congeals in fryer pots, filter machines, grease carts and fat trays once the equipment cools. It behaves differently from free-flowing oil, so it needs scoops, scrapers and heated pump-outs rather than a simple gravity drain.
Left in place it hardens, traps food solids and turns rancid, which is where kitchen odor complaints usually start. Regular removal keeps fryers filtering properly and keeps the back of house clean.
