Shortening is a solid or semi-solid fat, usually plant based, formulated for baking and frying stability. It comes in cubes, blocks, cases and bulk, and once used it needs a completely different handling plan than liquid oil — you cannot pump a solid.
Bakeries, fryer operations and manufacturers all end up with used shortening plus expired and out-of-code inventory, and we collect both.
